Goetta

Goetta was a way to have meat go further as it is a mixture of meat and oats. It is popular in Metro Cincinnati. Traditional it is made with ground pork and beef but it translates perfectly to large game meat and even bear. You traditional fry it as a breakfast sauage and serve with an egg. It is so tasty you will not need Jimmy Dean again!!


Goetta

  • 1 onion, chopped fine

  • 1 TBS butter

  • 2 1/2  cups of oats

  • 6 cups of stock

  • 6 teaspoons salt

  • 3 bay leaves

  • 2 teaspoons of marjoram

  • 2 lbs of ground meat

  • 5 cloves of fresh garlic

  • 1 1/2 teaspoon ginger

  • 1/2 teaspoon of black pepper

  • 1/2 teaspoon white pepper

  • 1/4 teaspoon of cloves

Sautee onions with butter over medium heat until translucent. Then add the oats, stock, salt, bay leaves and marjoram cook until the oats are soft stirring occasionally. Remove the bay leaves and add the remaining ingredients cook until the meat is done and liquid is gone.

Spray a loaf pan with cooking spray and then place the meat mixture into the pan and refrigerate overnight.

Slice and fry like you would any breakfast sausage and serve with you favorite eggs, enjoy!
