That is a spicy meatball!

This is one of my brother-in-laws favorite dishes that I do.  I love it for parties because they will sit in the crockpot and stay good for the hole party.  This recipe is not that spicy but you can certainly kick it up to your liking!!


Wild Game Italian Meatballs

  • 1 cup Italian bread crumbs

  • 3/4 cup Parmesan Cheese (I prefer the shredded)

  • 1/2 fresh parsley, minced

  • 2 eggs, beaten

  • 2 tablespoons of dried oregano

  • 1 tablespoon garlic, minced

  • 1 tablespoon black pepper

  • 1/2 tablespoon of white pepper

  • 1 teaspoon of crushed red pepper

  • 2 lbs of ground meat

  • 1 cup of stock

Preheat the oven to 350 degrees.  Mix together all of the ingredients except for the stock. lightly grease a glass baking dish and begin to roll your meatballs and place in the dish so they are not touching.  When done pour in the stock so it comes almost halfway up the meatballs.  Cover with foil and bake for 30 min.  Remove the foil and then let them finish cooking 10-15 min depending on the size of the meatballs.

Place the meatballs into a crockpot or other serving dish and cover while you make the sauce.  You can simply thicken the broth that remained in the baking dish by adding into a sauce pan and adding some milk and cornstarch or add some of the broth to your favorite marinara recipe.  You can serve the sauce on the side or I will pour right over them if leaving in the crockpot for a party.
