Ground Elk Burger with Mushroom Gravy on a Squash Hash

A long title but a quick recipe to put together so I do hope that you try it. I came up with this as I love squash but my husband not so much so this hid it and replaced potatoes. I would not say this is healthy but it does have a lot of good ingredients, not only the squash but mushrooms are so good for you. The below recipe is for 4 but can easily be downsized for 2, just make the 2 extra squash patties and save them for breakfast the next morning.

  • 1 yellow squash, shredded

  • 2 green onions, chopped

  • 1 egg

  • 1/3 cup of shredded cheddar cheese

  • 1 tablespoon of flour

  • 1/4 cup of yellow meal

  • 1 lb of ground meat (elk, venison, antelope or moose)

  • 1 tablespoon of seasoning salt (I like “slap your mama”)

  • 1 tablespoon of paprika

  • 2 tablespoons of butter

  • 6 portabella mushrooms, diced

  • 1 clove of garlic, minced

  • 2 tablespoon of flour

  • 1 tablespoon of balsamic vinegar

  • 2/3 cup of milk

  • 1/4 cup fresh parsley, chopped

  • Sour Cream

Mix together the squash, onion, egg, cheese, flour, corn meal with some salt and pepper and then set aside. Mix together the meat, seasoning salt and paprika together and make 4 patties and set a side. Heat butter in a medium saucepan over medium heat. Once melted add mushrooms and garlic, salt and pepper to taste. Cook for 4 minutes and then add in the flour and stir to incorporate. Cook for a minutes or two more and then deglaze the pan with vnegar working off all the brown bits then add the milk and stir. Turn to the lowest setting stirring occasionally as you cook the rest of the meal.

Heat two skillets over medium heat both with a couple of tablespoons olive oil. Use the first one fo cook the squash. You should be able to make 4 “Hash Patties” out of the squash mix. Use the other for the 4 ground meat patties. It should take about the same time to cook the squash and the meat 3-5 minutes a side to crisp up. If you need to cook in batches have the oven on 200 degrees to keep items warm. Remember to keep stirring the gravy and adjust heat accordingly so that it thickens.

Once everything is cooked lay up each of the plates:

  • First a squash patty

  • then the meat patty

  • top with gravy

  • parsely

  • sour cream
