Elk Steak with Dates

This recipe was inspired by a dish I had at a Middle Eastern restaurant. The traditional dish is a slow cooked veal but I have adapted it to a sauce to accompany a steak. Pair it with some homemade Naan and my spiced chickpeas with fresh salad and you have a fresh dish with some Middle Eastern flavors.

Elk Steak with Dates

  • 2 elk steaks, other large game such as vennision or antelope will work as well

  • 1 tablespoon of butter

  • 2 cloves of roasted garlic

  • 1 green onion, diced

  • 4 dates, diced

  • 1 teaspoon of balsamic vinegar

  • 1/8 teaspoon of cinnamon

  • 1/8 teaspoon of allspice

  • 1 cup of beef stock

Salt and pepper the steaks and let sit at room temperature while you make the sauce. Heat the butter over medium heat and garlic, onion and dates and cook for 2-3 minutes. Add the remainder of the ingredients and let reduce in half then turn to low and keep on low while you cook the steaks on the grill. Once steaks have reached the desired doneness let rest, top with sauce and serve immediately.
