Wild Game Red Beans and Rice

Red beans and rice are one of my favorite recipes from Louisiana. There are many ways to make red beans and rice, the below recipe is my take with wild game.


Wild Game Red Beans and Rice

  • 0.5 lb of dry kidney beans

  • 10 cups of stock, I really like to use stock made from a ham bone

  • 1 tablespoons of cayenne pepper

  • 1 tablespoons of seasoning salt

  • 1 jalapeno, diced

  • 2 cloves of garlic

  • 2 tablespoons of olive oil

  • 1 large onion, chopped

  • 1 bell pepper, chopped

  • 2 celery stalks , chopped

  • 1 lbs of ground elk

  • 1 teaspoon of cayenne pepper

  • 2 cups of rice, cooked

  • 1/4 cup parsley chopped

Soak the beans overnight and then drain. Add beans, stock, salt, jalapeno and garlic to a large stock pot or crockpot and cook for 6 hours. If you are using an insta-pot this time can be reduced to 1 hour.

After the beans and rice are cooked, heat olive oil in a skillet over medium heat then add onion, pepper, and celery. Cook until onions are translucent and then add the ground meat, cayenne pepper and salt and pepper to taste. Once the meat is cooked add the beans, rice and parsley. Stir to combine, check seasoning and add additional salt and pepper if needed.
