Shaved Asparagus and Carrot Salad

There is nothing better in my mind than a perfectly cooked steak, especially if it is a delightful piece of elk or antelope backstrap. While I love my meat and potatoes I also like to have some fresh greens. This shaved salad has a lot of healthy ingredients and eating all of them raw helps to insure that you are getting all of the nutritional value our of these veggies. Also in this recipe I use hulled hemp seeds, these guys add a little texture and nutty flavor to the salad and are super healthy for you and don’t worry totally THC free!!

Health Benefits of this Salad

  • Apples: "An apple a day", they say, but why is that? Maybe because the apple helps to balance blood sugar levels, strengthens bones and helps to lower cholesterol. Using a peeler to shave the apple with its skin helps to keep the fiber, vitamin c and iron that gives this wonderful fruit it's healthy punch! The lemon used to dress this salad will keep your apple from turning brown so make sure and dress the salad right way.
  • Asparagus: helps to strengthen your immune system and removes energy draining toxins. This is of course good any time but during these long winter months when colds and viruses are lurking about it is very important. Asparagus also protect your heart and promote skin health.
  • Carrots: help aid digestion, lower cholesterol and of course are good for the eyes. In addition, the powerful antioxidants help to keep skin and nails healthy and strong.
  • Spinach: is good for bone health, is an anti-inflammatory, is good for heart health and reduces the risk of cancer. Spinach contains oxalic acid so to increase the absorption of its vital minerals you should eat with a citrus fruit while eating it raw. The lemon juice used to dress this salad helps in this role.

Shaved Asparagus and Carrot Salad

  • 1 medium carrot, shaved with a peeler

  • 4 asparagus, shaved with a peeler

  • 1/2 an apple, shaved with a peeler

  • 1 cup of spinach, cut into ribbons

  • 1 tablespoon of lemon juice

  • 1/2 tablespoon of olive oil

  • 2 tablespoons of hulled hemp seeds

  • salt and pepper to taste

  • fresh grated parmesan cheese

10-15 minutes before you are ready to serve, mix all ingredients together except the parmesan cheese. Make sure the salad is well coated but not overdressed. Top with the cheese right before you are ready to serve.
