Irish Stew

A warm comforting dish that is always a hit on St. Patrick’s Day!


Irish Stew

  • 2 TBS olive oil

  • 3 lbs big game roast, diced

  • 1 tsp salt and black pepper

  • 4 cloves of garlic, minced

  • 2 onions, chopped

  • 6 oz bacon, diced

  • 3 carrots, diced

  • 3 celery stalks, diced

  • 3 TBS flour

  • 1 bottle of Guinness

  • 4 oz tomato paste

  • 3 cups broth

  • 2 bay leaves

  • 1 TBS thyme

Heat olive oil in a heavy pot, season the meat with the salt and pepper and then brown the meat. Remove and set aside.

Add garlic, onions and bacon to the pan, add more oil if needed. once the bacon is brown add the carrots and celery. Cook for 2-3 min and then add the flour, stir for 1 min.

Add the Guinness, tomato paste, broth, bay leaves and thyme. lower the heat and cover and let slow cook for at least 3 hours,
