Smoked Salmon

This is a very light smoked salmon recipe and on that can be done in your oven. I like to make a large batch and then freeze. This makes a wonderful appetizer,  or a topping over spinach salad, as shown above.

Smoked Salmon

  • 4 cedar papers

  • Olive oil

  • 2 salmon fillets

  • Salt and pepper

  • 4 sprigs of fresh rosemary

  • 4 sprigs of fresh thyme

  • Honey

  • 8 sprigs of fresh chives

Soak the cedar paper in water as directed. Drizzle olive oil over a glass baking dish. Salt and pepper both sides of the salmon fillets. Lay out two  piece of the cedar paper, make sure it is long enough so the whole fillet can lay on the paper. Place two springs of rosemary and thyme on the paper and then lay the salmon on top and drizzle with honey. Place four sprigs of chives on the filet, then wrap the paper around the salmon. Tie with kitchen string and place into the glass baking dish. Continue until all the fillets are wrapped. Drizzle some olive oil and honey on top of the wrapped fillets and cook in the oven 45 min at 250 degrees or until flaky. Serve at room temperature.
