Spinach Soup

Do you have a bunch of spinach that you need to use up? Well this is a great way to do it.  This tasty soup recipe can stand on its own for meatless Mondays or is wonderful to pair with my pheasant salad sandwich.


Spinach Soup

  • 1 pound of fresh spinach (you can always sneak some kale or watercress in as well)

  • 1/2 of a white onion, chopped

  • 1 clove of garlic

  • 2 tablespoons of butter

  • 3 cups of stock

  • 1 1/2 teaspoons of salt

  • 1 teaspoon of pepper

  • 1/4 teaspoon of nutmeg

  • 1 cup of milk

Place all the items but the milk into a medium sized stock pot over medium heat.  Let cook for 15 min.  Use an immersion hand blender or transfer to a blender and blend until smooth.   Add the milk and blend once more.  Turn down the heat to low and let cook for another 10 min or until it is the thickness you like.
