Breakfast Hamburger

Sausage and Bacon are of course King at breakfast but ground hamburger is cheap and we always seem to have a lot around.  So while I am working on Breakfast sausage recipes you can make from your burger this is a quick recipe to do on the fly.  This is a loose recipe but you could mix it all raw (without the stock) and make patties as well.  This is great with eggs, in hash, in quiche's or breakfast tacos as well.


Breakfast Hamburger

  •  2 tablespoons of olive oil

  • 1 pound of ground meat, elk, venison, antelope or moose

  • 1 cup of white onion, diced

  • 1/2 cup of stock

  • 3 1/2 teaspoons of sage

  • 1 teaspoon of thyme

  • 2 teaspoons of hot sauce

  • 1/2 teaspoon of salt

  • 1 teaspoon of garlic powder

  • 1/2 teaspoon of red pepper flakes

  • 1/2 teaspoon of black pepper

  • 1/2 teaspoon of Ancho Chili
     

Heat the olive oil over medium heat and add meat and onions to brown.  Mix remaining ingredients into the stock and once the meat has started to brown pour over to incorporate.  Continue to stir and reduce heat to med-low and let reduce.
