Basil Scalloped Potatoes

  • 4 cups of potatoes, sliced thin (I do 1/16" on my mandilion)

  • 2 cloves of garlic, minced

  • 2 tablespoons of fresh basil, minced + some additional for topping

  • 1/2 cup of Gruyere Cheese, shredded

  • 3/4 cup of milk

  • 3/4 cup of cream

  • 1 tablespoon of flour

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of Ancho chili powder

  • 1/4 teaspoon of white pepper

  • Breadcrumbs for topping

  • Parmesan for topping

Preheat the oven to 350 degrees and butter a 8" x 8" dish.  Begin by placing a single layer of potatoes and sprinkle some of the garlic, basil and Gruyere Cheese.  Continue layering the potatoes, garlic, basil and cheese until you are at almost to the top of the dish.  Whisk together the milk, cream, flour, salt, chili powder, and white pepper.  Gently pour over the top of the potatoes.  Cover with foil and bake for 30 minutes.  Mix together the breadcrumbs and Parmesan.  Uncover and top with breadcrumb mixture and basil, place back into the oven for 15 minutes uncovered.
