Rice Pilaf

This is an easy rice dish that you can easily make your own. I have laid out the basic dish in the recipe below but the one I have pictured above has the addition of shrimp in the rice to go along with that lovely lobster tail. Just add the cook protein of your choice at the stage where you add the butter a parsley and enjoy!

Rice Pilaf

  • 3 tablespoons of butter

  • 1 large onion, chopped

  • 1 1/4 cup of basmati rice

  • 2 1/4 cup of stock

  • 1/4 cup of vermouth

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of pepper

  • 1/4 cup parsley, minced

Melt 2 tablespoons of butter in a sauce pan and add the onions cooking until soft. Add the rice and then cook for 2 minutes, stirring to make sure the rice gets coated with the butter.  Add the stock, vermouth, salt and pepper.  Bring to a boil, cover and then turn down to a simmer and let cook for 20 minutes.  Pull off the heat and stir in the remaining butter and parsley.  Cover and let stand for 10 minutes.  Fluff the rice and serve.
