Parmesan Shortbread Biscuits

These wonderful parmesan crackers are great on there own but will add a nice cheesy crunch to your meat and cheese board. The dough is also easy to work with and so you can cut into any shape you want to fit the need of your party. Scroll down to the bottom to see them in Star Wars shapes.


Parmesan Shortbread Biscuits

  • 1 3/4 cup of flour

  • 3/4 cup of Parmesan cheese

  • 2 tablespoons of fresh rosemary, chopped

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of pepper

  • 1 cup of cold butter

  • 1 tablespoon of roasted garlic
     

    Combine all ingredients in to a food processor and pulse until crumbly.  Add a little water at a time and process until the dough comes together being careful not to over work the dough.  Wrap the dough in plastic wrap and refrigerate for 1 hour.

     

    Pre heat the oven to 350 degrees.  Roll out the dough on a lightly floured surface to 1/8" thick.  Use a knife or cookie cutter to cut into desired shapes and pick with a fork then place on a baking sheet with a re-usable baking mat or parchment paper.  Bake for 15 minutes or just until they start to barley turn brown and then let cool on a wire rack.  Maybe stored in an air tight container for up to a week or served once cooled.
